Casa Chimayo Restaurante, a dog-friendly establishment since its opening in 2011, specializes in authentic Northern New Mexican cuisine. Following their passing, the property was leased for restaurant use, hosting various successful iterations since the 1970s, including Shoko's Cafe, Jefferson Soup Company, Chez Pancho, Maria Isabel, The Corn Dance Cafe, and Los Mayas, before Casa Chimayo Restaurante took up residence.
