Dave, a chef with experience in Thomas Keller's renowned French Laundry organization, embarked on a culinary quest to create... the ultimate hot chicken, meticulously searching, tasting, and frying. With an initial investment of just $900, the foursome launched a humble stand in an East Hollywood parking lot, focusing on a streamlined menu where chicken took center stage. The restaurant's chicken is celebrated for its exceptional juiciness and tenderness, each piece coated in Dave's signature spice blend, ranging from "Mild" to "The Reaper." Arman's savvy use of Instagram generated significant buzz, quickly drawing crowds and the attention of Eater/LA, whose subsequent headline proclaimed, "East Hollywood's Late Night Chicken Stand Might Blow Your Mind." Within a year, the overwhelming demand led to the opening of a brick-and-mortar location in a hip strip mall, adorned with decor by local street artists, where wait times often exceeded an hour.
